Version Control for Binary Files?

Hi list. This is a bit of a stab in the dark, and I'm just after some
pointers/ideas really. 

For a project I'm working on, I'm hosting some PDF's, docx's etc for
various companies. Obviously, files will be added, moved, deleted,
renamed. 

What I'm wondering is if there's a program that will take a snapshot
either at a given time each day, or as changes occur (automatically) so
a file can be undeleted / restored.

By the way, this is using Apache httpd and WebDAV shares. I've seen
that I could use SVN autocommit, but before I go down that road, I'd
like to know if:

1. Could Mercurial do this?
2. If not, are you aware of another tool that will?
3. It's not worth the trouble (my view at the moment).
